Duration: 3 Weeks, 3hrs, 4 times a week
Course Outline:

Foundations: Kitchen safety, knife skills, food hygiene and recipe reading.

Basic Cooking & Baking: Stocks, sauces, basic hot/cold dishes, bread and foundational pastries.

Catering Systems: Bulk production, menu costing, plated service and buffet planning.

Advanced Pastry & Finishing: Entremets, laminated dough, temperature control and decorative techniques.

Event Kitchen Management: Staffing, flow, equipment use, HACCP and service execution.
