Training Location: Beside Boku mart, Okunola bus-stop, Egbeda, Lagos state, Nigeria
Course Duration: 8 weeks, 3 hrs, 3 times a week
Course Outline:

Foundations: Culinary theory, knife skills, mise en place and pantry management.

Local Ingredients Mastery: Indigenous proteins, tubers, spices and traditional techniques.

Continental Techniques Applied: Sauces, plating, protein cookery adapted to African ingredients.

Menu Fusion & Presentation: Modern plating of Nigerian/African dishes and cross-cultural menu design.

Large Scale & Event Cooking: Timing, batch cooking and preserving flavour at scale.

Live Service & Assessment: Restaurant-style service, critique and final practical exam.
