Training Location: Beside Boku mart, Okunola bus-stop, Egbeda, Lagos state, Nigeria

Course Duration: 8 weeks, 3 hrs, 3 times a week

Course Outline:

  1. Foundations: Culinary theory, knife skills, mise en place and pantry management.

  2. Local Ingredients Mastery: Indigenous proteins, tubers, spices and traditional techniques.

  3. Continental Techniques Applied: Sauces, plating, protein cookery adapted to African ingredients.

  4. Menu Fusion & Presentation: Modern plating of Nigerian/African dishes and cross-cultural menu design.

  5. Large Scale & Event Cooking: Timing, batch cooking and preserving flavour at scale.

  6. Live Service & Assessment: Restaurant-style service, critique and final practical exam.
    Outcome: Chef de partie, regional cuisine specialist, restaurant owner.
